After its first year, piebar has revamped its menu, pizza recipe and a few other items to give guests more of what they want.
The pizza is still square, but the taste is anything but. Cooked in the southeast's largest pizza oven, the pizzas emerge, dripping with mozzarella browned to perfection, on a crispy crust that is soft and warm on the inside. piebar's new recipe for their pizza dough is a more traditional take on pizza; guests can now expect a thicker crust that is still crunchy around the edges, but doughier in the center, with those big airy bubbles that pizza-lovers crave.
Another modification piebar has introduced is the build-your-own option. Of course piebar's famous signature pies are still offered, but guests now have the option of being as creative - or traditional - as they please. Toppings include eggplant, goat cheese, fried chicken, prosciutto, and arugula - to name a few. Favorite signature pies like the Naked with mozzarella, cherry tomatoes and pinenut pesto, the NY Deli with pastrami, provolone, caraway and shallot or the Apple, with smoked bacon, cheddar and caraway are still offered on the menu, but are now served atop the new pizza crust.
Other menu items include Shared Plates like warm focaccia, polenta fries, roasted eggplant parmesan and antipasti. Guests looking for something other than pizza will find entrees such as rainbow trout, ricotta ravioli and minute seared sirloin steak in the Pastas, Fish & Meats section of the menu.
piebar has attracted droves of people since its opening in July of 2005. To better serve its guests, the restaurant now takes reservations to ensure that guests are seated when they arrive, rather than the initial first come first serve policy. Other changes at piebar include a switch to glassware instead of plastic ware. Also, the menu offers some great new options for guests including a Family Style menu and a Late Night unlimited pizza and beer or wine special. The Family Style option is a 4-course fixed menu available to parties of six or more. Included, is a choice of fried calamari or fried mushrooms, choice of caesar or mixed green salad, parmesan meatballs, signature pizzas and two pitchers of beer for $22 per person (with soft drinks it is $16 per person). The Late Night option is available after 10 pm nightly for $25 per person, and offers guests unlimited beer or wine and unlimited signature pizzas. Guests are encouraged to drop their keys in a bowl - piebar will help them get home.
